Easy processing and preparation
The inherent quick-setting nature of i-soc enables manufacturers to speed up turnaround, hence optimising the use of product line capacity. The fats solidify directly into a stable form, eliminating the process of tempering. This fast crystallisation has other benefits, including glossiness, clean mould release and non-greasiness in the final product. These attributes make the final product stand out in the market.
Appetising appearance
i-soc satisfies the senses with excellent snap and gloss, and an outstanding cool melt sensation. The combination of these qualities imparts an appetising appearance and delectable mouth-feel that is hard to resist.
i-soc compatibility with cocoa butter is very limited. In order to achieve optimum results, it is recommended that at least 95% of the total fat system comprises i-soc is used in the total fat system.
